All the hives in a single apiary share the same part of the Parisian terroir (within a 3 km radius of the hives), rich in exceptional floral diversity. Each bee colony explores its environment in its own way, but only harvests a distinct part of it. As a result, each honey reveals a unique fraction of the terroir, different from one hive to the next. As in the world of plot-based spirits, there is no one honey better than another, simply precious nuances that would be lost if the harvests were mixed.
